Safari on a Mac outstrips any pc browser by far. However two cents and bias aside, Safari on the iPhone enjoys the full functionality of its aforementioned eponym and does indeed support cookies, java script, plug-ins, and even developer tools. Additionally it has a built-in search bar so you don't have to trek back to Google every other page, makes it a breeze to add/delete new bookmarks or sync existing ones, and even comes with a pop-up blocker...no Norton Anti-virus required.

However the iPhone, not Safari per se, does not currently support flash-based content so you won't be able to view anything that requires Macromedia's Flash player. I checked adsense on my iPhone and was able to get to the log in screen but couldn't check beyond that as I am not a member.

Also one of my favorite features is its ability to switch seamlessly between applications via contact hyperlinks, I.e. if I am browsing the internet and happen upon a phone number or email address I can just press it to instantly call or begin writing whomever I've found.

If you are an ATT customer and are even for a second considering buying an iPhone do yourself a long overdue favor and get it. Aside from the sundry, SUNDRY other amazing features it houses having the internet in your pocket (emphasis on that) is a great convenience you don't want to go without.
