The best thing to do is to go to a deli in a grocery store. Tell the deli workers that you need enough for 16 (or 20, just to be extra sure). Deli workers do this for a living and can prepare a nice platter or two for you.
Oh--and stuck on a boat with 16 people with nothing but chips and meat? No no no. I'd make it a potluck and ask everyone to bring a dish or snacks. Or if you don't want to do that and you can afford it--just buy a bunch more to eat. Nothing wose than being stuck on a boat with no food.
With nothing else to go with them, you should figure at least two sandwiches each and problely one slice of cheese, if you want a good sandwich. Therefore, you will need at least 64 slices of lunch meat and 32 slices of cheese. Also, don't forget the ketchup, mustard and mayo.

How do you figure out how much cold cuts to purchase for sixteen people. It is for a boating party and will be used for lunch. Not much else will be available except perhaps chips
