Here are some ideas:
Magazine subsription
Cologne
Clothing
Food
Sports accessories

Here's a creative idea:
A Moments basket/box : Get things that remind you of special moments together and combine them in a gift basket or box (ie. a special movie, special songs, framed pictures, momentos, and anything you share with him like reminders of little rituals you two share or inside jokes that you share.)

Maybe theres something he could REALLY use but he just hasn't come out and said it ? there's always the gift card route as well. If he's a hunter or a sports fanatic you could get a gift card to an outdoors store and tlel him you wanted to get him something that he could REALLY use or REALLY wanted, but you wanted to make sure it was something he COULD use. I know it may sound impersonal but better to give someone an option then to get them something they may end up returning. Maybe a gift book of certificates ? Like a home cooked dinner, dinner and a movie, or a movie night with his choice, a night out somwhere he's been wanting to go but you haven't really wanted to go ? a picnic in the park, a back massage, those kinds of things
