Well I do have a very VERY good carrot cake recipe but its not that easy just takes a lot longer. And this icing takes like 10 mins to make:
1 (8 oz.) Package Cream Cheese, Softened
1/4 cup Butter, Softened
1 cup Sifted Powdered Sugar
1/2 tsp. Vanilla Extract
This is the recipe I made bake in culinary school at Le Cordon Bleu. If you want to carrot cake recipe I have just let me know

use oil instead of butter and 1/2cup evaprated milk with 1/2 cup of water

Does anyone have an easy carrot cake recipe with cream cheese icing? It cant use more than one package of cream cheese and cannot use butter milk!
