So just running through your question in order...

This sounds perfectly normal if this was your first few times. Some people bleed more than others and some hardly at all. It certainly sounds like you still had your hymen though.
The amount of blood is often determined by the type of hymen the woman has as well as how large the guy is, how gentle he was and how turned on the girl was.

When using condoms, it is even more important that the woman is wet because of the slightly enhanced friction from the latex as compared to bare skin.
Perfectly normal that the next few times you had sex it was a little sore. it would be like having a few small cuts inside you where the hymen had torn and these would usually take a few weeks or so to heal up properly.
You go on to say:
'We then didn't have sex for about 2 weeks and now the last 3 times when we had sex, there was a LOT of blood. I first thought that maybe my hymen didn't break properly, but the blood hasn't stopped (it's just there when we have sex, not afterwards)'
It is very possible that you had not healed up fully and opened up the wound again.
If there is just a little blood on the sheet or on his penis, that would indicate that you have just reopened part of the tear that had not fully healed.
It is practically impossible to have a penis fully in you and for your hymen not to tear. (unless your guy has a penis the size of a cigarette lol) See the following link to see what I mean:

'so now I did make an appointment at a gynecologist...but am only going in a week or so, and was wondering if anyone had any idea what is going on possibly, because I am a bit freaked out.'
That is a good idea even if it is just to put your mind at ease. Unless it is constantly bleeding, no reason to get freaked out. you sound perfectly normal and I'm sure your Gyno will tell you the same.
Other than if you have problems with the regularity of your periods or spotting in between periods, or had any problems like this before you started to have sex, then I cant imagine anything else it is more likely to be other than your torn hymen had not fully healed. (hence the stinging and soreness)
Be reassured that you sound perfectly normal and it does not sound like anything to get stressed over. I am confident that your gyno will shortly put your mind at ease.

obviously seeing someone professional should help explain this. If you are not feeling much pain while having sex it shouldnt be a problem. It is likely that the remains of your hymen are not completely healing over after being torn and therefore bleed easily on penetration/disturbance again. Hopefully thats all it is

Bleeding when having sex.

sex for about 2 weeks and now the last 3 times when we had sex, there was a LOT of blood. I first thought that maybe my hymen didn't break properly, but the blood hasn't stopped (it's just there when we have sex, not afterwards)
so now I DID MAKE an appointment at a gynecologist...but am only going in a week or so, and was wondering if anyone had any idea what is going on possibly, because I am a bit freaked out.
I am also on birth control and we do use condoms, but it's still a bit strange and I would like to know if anyone has experienced this.
oh and I just want to add that it isn't sore when we have sex, (it is a bit uncomfortable when we start out) and I only notice the bleeding afterwards. It's quite a lot of blood. almost like I am on my period and it stops soon afterwards
