I've not crossed this bridge yet with my own son, and am not medically qualified, but I have HEARD (among my circle of friends, and read in a parenting magazine) that waking up a child to have them use the toilet actually hiders them. By breaking their REM cycles repeatedly, they wind up so exhausted that they just want to sleep afterward and end up sleeping through their body's natural cues.
Try using goodnites or some other form of child bed wetting pants. Keep his fluids reduced after dinner like you have been, have him pee before bed, and then cross your fingers. This isn't something he can help. It's probably not something he can learn even- it's something he'll have to grow into. If none of this is working, or has worked in the past, check with his pediatrician... come to think of it- check with his pediatrician anyways- he or she may be able to give you some really good advice.

get him up at around 1opm or midnight for a last urination on the toilet STILL he wets the bed regardless
