Here's two of my favories;
1 lb fettcucine
2 cups shallots, diced
1 tbsp olive oil
1 lb frozen peas, thawed
1 clove garlic, minced
1 jar of nondairy alfredo sauce
1/4 c chopped parsley\salt and peper to taste
Cook fettucine, 8-10 minutes in boiling water, Drain, return to pot, Set aside. In pan saute shallots, in olive oil about 5 minutes, till soft., add peas, garlic, saute 2 minutes add pea mixture and alfredo sauce to noodles, toss well, serve season to taste
Grilled Portobello Mushroom/veggie fajitas
3 tbsp balsamic vinegar
3 tbsp olive oil
2 tbsp garlic minced
1/4 tsp salt/ 1/8 tsp pepper
2 red onion sliced
2 red/orange peppers deseeded and cut into quarters lenghtwise
2 green peppers, cut into 1/2 lenghtwise
2 jalapeno peppers cut into 1/2 lenght
4 8' flour tortillas
small can green chilies

In large bowl place vinegar, oil, parsley, garlic salt peppers, and whisk well. Add all veggies to combine and coat, set veggies aside and allow to marinade for 15 minutes. Place veggies on hot grill for 3-5 minutes, or place under oven broiler 3-5 minutes. Transfer veggies to cutting board and cut into strips, warm tortilla, and place veggies on plate for self serving. Top with green chilies.
