You can use margarine in place of butter - it shouldn't make the cookies dry. Keep in mind though, that sugar cookies do have a slightly dry texture - they're not naturally moist like chocolate chip.
If you find them bland, try adding a little more vanilla or maybe even almond extract or cinnamon...you can sprinkle the tops with extra sugar also.

helllo!
thank you. I just wanted to ask another thing
if I used margarin instead of butter, would those dry the cookies out too?
I tried the sugar cookie recipe again today... and I only cooked them 8 minutes.. the cookies didn't brown at all.. they...
were just white. they were soft but tasted bland.
any help?
