Eating 2000+ calories is good... eating under 500 calories would be really bad and probably be considered anorexic stick to 1200+ cals aday.
this doesn't sound healthy, you should consider talking to a professional about this. Generally anorexia is a mental condition, it is mostly about control. Are you wanting control over something in your life, or are you just wanting to lose weight. If you are just wanting to lose weight, (and not gain it back) you would be going about it the wrong way.

No, you're anorexic if you don't eat at all
Anorexic, I don't think its exactly the type of condition that you actually draw the line on. If your diet is making you sick because of malnutrition, then you have a few millions Anorexic people in Africa, it does not work that way. Like the fella said above, its generally a mental condition. Your diet is making you sick because you want to be skinnier, can't stop and is never satisfied that is a simpler definition of Anorexia.

wanting to starve yourself doesnt make you anorexic
If you started restricting your diet, this still doesnt make you anorexic, infact it doesnt necessarily mean you have an eating disorder... people on diets are obviously not all anorexic...
Now if you're starving yourself for the wrong reasons, your eating habits become harmful, cannot actually see how big you are, etc etc, then we're in the domain of an eating disorder. If you are under a BMI of 17.5 and have several other symptoms, then you can be classified as having anorexia...
